Recipe No. 2
( Specially for Mrs. Moir and Primary 7 Bervie Primary!)
Scottish Shortbread
(Always a favourite with the teachers and staff)
Note from Beecy... I'm afraid Robbie is a little old fashioned in his recipe today.... Imperial instead of metric... If this causes too many problems email Beecy and we'll get Robbie to change it.
Ingredients:
6oz Plain Flour
2oz Castor sugar
4oz Butter
1/4 Teaspoon vanilla essence
Castor sugar for dusting
Preheat the oven to 150 degrees Celcius (300degrees F/Gas mark 2)
Combine all the shortbread ingredients in a bowl or a food mixer and combine until it forms a ball of dough. ( You can add 2oz of pecan nuts or walnuts at this stage if you want something different - Beecy says that shortbread made with this addition is especially delicious
Flour the work surface and roll out the ball to a thickness of 1/4 inch.
Take a medium round cutter to make about 16 rounds.
Place the rounds on a baking tray and put in the oven.
Bake for 30-40 minutes or until golden brown.
For a change: While they are still warm, dip into melted chocolate or rough brown sugar.
Enjoy and be safe
