Ingredients

lOOgms plain flour 
50gms margarine
50gms brown sugar
1/2 beaten egg
1 teaspoon mixed spice 
optional small pinch of salt

Method

1 Light the oven l90ºC Gas mark 5
2 Grease the trays.
3 Beat the margarine and sugar until light and fluffy. Beat the egg a
little at a time.
4 Sift in the flour and salt and spice.
5 Make a firm dough.
6 Sprinkle some flour onto the surface of the table and onto the
rolling pin.
7 Roll out lightly to about 1/2cm.
8 Cut out the' shapes. Lift carefully onto the baking trays.
9 Bake for lOmins.
10 Place on a wire rack to cool.

Icing

Ingredients

5ogms icing sugar
1 tablespoons hot water

Method
1. Sift the icing sugar.
2. Mix in the water.
3. Add colour if desired.
