A delicious starter served with Melba toast or a very morish lunch with chunks of crusty bread. Ingredients 2 smoked mackerel fillet (ready
to eat) Method Remove the skin and bones from the mackerel and mash thoroughly. Melt the butter and fry the onion (and garlic if using) until soft. Add to the mackerel with grated egg, salt and pepper to taste and mix well. Add the cream until the desired consistency is reached. Spoon into a bowl and chill until required. These quantities will make a starter for four or lunch for two.
